This crunchy veggie relish takes just 20 minutes of prep time and serves as the perfect topper to hot dogs or as a colorful condiment at any summer picnic.

Ingredients

cups finely chopped cabbage

cup sugar
1/2
cup white or cider vinegar
1 1/2
teaspoons salt

teaspoon mustard seed
1/2
teaspoon celery seed

medium cucumbers, shredded (3 cups)

medium red bell pepper, chopped (1 cup)

Directions

  • 1 Mix all ingredients in large bowl. Spoon into 1-quart jar and 1-pint jar.
  • 2 Cover and refrigerate at least 24 hours but no longer than 2 weeks.

Expert Tips

To chop cabbage, place flat side of 1/4 head of cabbage on cutting board. Cut into thin slices with large sharp knife. Cut slices several times to make smaller pieces.
