What is a cheesecake tart? It's everything you love about cheesecake but in a less intimidating form! We've taken the rich, silky goodness of cheesecake with the fresh, fruity flavors of strawberry and lemon and put it into a shorter tart form that's easier to make. From our Betty Crocker Cookbook 13th edition, we've added chia seed for a trendy twist. We think you'll be just as thrilled as we were at taste panel with its impressive appearance and divine flavor.

Ingredients

Graham Cracker Crust

  • 1 1/2 cups finely crushed regular or cinnamon graham crackers (24 squares)
  • 1/3 cup butter, melted
  • 3 tablespoons sugar

Tart

  • 2 packages (8 oz each) cream cheese, softened
  • 3/4 cup sugar
  • 1/2 cup sour cream
  • 2 teaspoons grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 egg
  • 4 cups sliced strawberries
  • 1 tablespoon chia seeds, if desired
  • 1/3 cup sugar
  • Additional grated lemon zest or strips of lemon peel, if desired

    Heat oven to 300°F. In medium bowl, stir all graham cracker crust ingredients until well mixed. Press mixture firmly and evenly against bottom and side of 10-inch round tart pan with removable bottom (do not bake).

    In medium bowl, beat cream cheese and 3/4 cup sugar with electric mixer on medium speed 1 minute or until light and fluffy. Beat in sour cream, lemon zest, lemon juice and egg just until blended. Fold in 2 cups of the strawberries and the chia seeds. Spread over crust. Place tart on baking sheet.

    Bake 40 to 50 minutes or until cheesecake is set at least 2 inches from edge of pan, but center of cheesecake still jiggles slightly when moved. Turn oven off; open oven door at least 4 inches. Let cheesecake remain in oven 30 minutes. Cool on cooling rack 30 minutes. Remove tart from side of pan. Refrigerate at least 4 hours but no longer than 8 hours.

    Meanwhile, in medium bowl, mix remaining 2 cups sliced strawberries and 1/3 cup sugar. Let stand about 1 hour.

    To serve, slice cheesecake into wedges; top with strawberries and lemon zest.
