cup Fiber One® original bran cereal
1
can (15 or 16 oz) spicy chili beans in sauce, undrained
1/2
cup quick-cooking oats
1/4
cup chopped green onions (4 medium)

egg, slightly beaten
1 1/4
cups washed fresh baby spinach leaves

slices tomato

whole wheat burger buns, split
  • 1 Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • 2 In medium bowl, mash beans with fork until no whole beans remain. Add crushed cereal, oats, onions and egg; mix well. Shape mixture into 5 patties, each about 3 1/2 inches in diameter.
  • 3 Spray 12-inch skillet with cooking spray. Add patties; cook over medium heat about 10 minutes, turning once, until brown.
  • 4 For each sandwich, place 1/4 cup spinach leaves and 1 tomato slice on bottom half of bun; top with bean burger and top half of bun.

I made these the other night....not bad, but definitely tastes like diet food. I agree with one of the other members about the mixture being too wet to form into patties, so I had to end up adding quite a bit of bread crumbs. My husband said, "it tastes like biting into bean dip." I happen to like bean dip so I don't mind too much...they do make you very full though. I also added salt, pepper, garlic powder & onion powder into the mixture. I froze the leftover patties and buns & plan to warm these up whenever I am out of time & need supper. I probably won't make them again though.

These were Ok but not great. They didn't hold together very well and weren't very flavorful. I did add some garlic powder to it and some panko bread crumbs because the mixture was kind of runny. They didn't taste too bad but I have had better veggie bean burgers. I topped it with a slice of cheese that help give some flavor. If I made again I would have to add some soy or something because I didn't really care for the texture either.
