small onion, chopped (1/4 cup)

Anaheim chili, chopped, or 1/4 cup canned chopped green chilies

garlic clove, crushed

tablespoon grated lime peel

tablespoons lime juice

medium tomato, chopped (3/4 cup)

cans (15 oz each) Progresso® black beans, drained, rinsed
2
cans (5 oz each) white tuna in water, rinsed, drained
  • 1 Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic in oil about 2 minutes, stirring constantly, until onion is softened.
  • 2 Stir in remaining ingredients. Cook about 5 minutes, stirring occasionally, until hot.

Expert Tips

Anaheims are mild-flavored chilies that have a long, narrow shape and a medium-green color.

Southwestern fare traditionally uses pinto beans. Try two 15- to 16-ounce cans, rinsed and drained, instead of the black beans.

I thought this sounded like an odd recipe but I had the ingredients handy except the tomatoes. Using canned tomatoes, drained of course, the only other change I made was to throw in a handful of corn chips just before serving. This was a very tasty meal which will be served again for certain.
