cup Original Bisquick® mix

cups chopped fresh spinach

cups crumbled feta cheese (6 oz)

cup chopped roasted red bell peppers and/or sun-dried tomatoes

cup chopped fresh basil leaves

teaspoon finely chopped garlic

package (9.6 oz) fully cooked sausage crumbles
1/4
cup crumbled feta cheese for garnish, if desired
  • 1 Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, beat eggs, milk and Bisquick mix with whisk until well mixed. Add spinach, 1 1/2 cups feta cheese, the bell peppers, basil, garlic and sausage; stir well.
  • 2 Cover; cook on High heat setting 3 to 4 hours or on Low heat setting 5 to 6 hours. Quiche is done when center is set and edges are deep golden brown.
  • 3 Cut into pieces to serve. Garnish each serving with a sprinkle of feta cheese.

For a no-fuss brunch menu, serve this recipe with fresh orange slices, white grape juice and mini croissants.

Don't have feta cheese in the house? This recipe is just as good when made with 1 1/2 cups of shredded pepper Jack or mozzarella cheese.

        I made this for work on friday and it is terrific! I used the tomato and basil feta cheese instead of adding the basil and sun dried tomatoes. I cooked on high and it was ready in about 2 1/2 hours. Definitely recommend!!
