Slow Cooker Chipotle-Black Bean Dip

can (16 ounces) Old El Paso® refried beans

can (15 ounces) black beans, rinsed and drained

can (11 ounces) Green Giant® SteamCrisp® Mexicorn® whole kernel corn, red and green peppers, drained

cup Old El Paso® Thick 'n Chunky salsa

chipotle chilies in adobo sauce (from 7-ounce can), chopped

teaspoons adobo sauce from can

cups shredded American-Cheddar cheese blend (6 ounces)

medium green onions, chopped (1/4 cup)

ounces tortilla chips
  • 1 Mix refried beans, black beans, corn, salsa, chilies, adobo sauce and 1 cup of the cheese in 1 1/2- to 2-quart slow cooker.
  • 2 Cover and cook on Low heat setting 3 to 4 hours, stirring after 2 hours.
  • 3 Sprinkle with remaining 1/2 cup cheese and the onions. Serve with tortilla chips. Dip will hold on Low heat setting up to 2 hours; stir occasionally.

If the group you are serving likes spicy food, go ahead and add another chopped chipotle chili and a little extra of the spicy adobo sauce.

Bring this dip the next time you are asked to bring an appetizer. Heat at home until hot and then just keep warm at the party.

It's fun to serve a basket of chips of different colors and shapes. Purchase blue, yellow and white tortilla chips, plus small round ones and the larger triangle-shaped variety. Serve them in a colorful holiday basket lined with a napkin.

    Made this for a party on Saturday and everyone loved it. And it was so easy!! I added double the chipotle and it still wasn't super spicy. Leftovers can be heated and wrapped up in a tortilla like a burrito.

    I threw in the entire can of chilis and adobo. Hate to see them go to waste! I've made this a couple times and it's so easy, and a big hit. Delicious!
