Mushroom and Caramelized Onion Tacos

A flavorful and filling meat-less dinner option, these 25-minute tacos are packed with seasoned fresh mushrooms, caramelized onions and queso fresco cheese.

Ingredients

tablespoon butter
1
medium onion, thinly sliced
1
package (8 oz) sliced fresh mushrooms (about 3 cups)

package (1 oz) Old El Paso™ taco seasoning mix

soft white or yellow corn tortillas (6 inch)
1/2
cup chopped fresh cilantro
1/2
cup crumbled queso fresco cheese

Directions

  • 1 In large skillet, melt butter over medium heat. Cook onion in butter about 15 minutes, stirring occasionally, until golden. Add mushrooms and taco seasoning mix. Cook 3 to 5 minutes longer, stirring occasionally, until onion and mushrooms are soft. Remove from heat; cover to keep warm.
  • 2 Wrap tortillas in microwavable paper towel. Microwave on High about 20 seconds or until warm. For each taco, stack 2 tortillas; spoon mushroom-onion mixture evenly over tortillas. Sprinkle with cilantro and cheese.

Expert Tips

For extra heat, add a few dashes of red pepper sauce to the mushroom-onion mixture.

Can’t find queso fresco? Oaxaca cheese and farmer cheese are excellent alternatives.
