1: jar (10 oz) lemon curd (about 1 cup)

1: package (1.9 oz) frozen mini fillo shells (15 shells), thawed

15: fresh blackberries

15: small fresh mint leaves

1 Divide lemon curd equally among fillo shells. Top each with 1 blackberry and 1 mint leaf.

These are so good. I served these tonight with the healthified homemade pizza, also from this website. The only changes that I made were that I used raspberries instead of blackberries because that is what I had on hand and I added just a small dollop of fat free whipped topping. Even my pickiest eater ate them up!!
