lb lean (at least 80%) ground beef

cups Green Giant® frozen mixed vegetables (from 1-lb bag)
1
jar (12 oz) beef gravy
1/2
teaspoon salt
1
bag (28 oz) frozen potatoes O’Brien with peppers and onions, thawed

cups shredded Swiss cheese (8 oz)
  • 1 Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. In 10-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in mixed vegetables, gravy and salt. Cook 3 to 4 minutes or until vegetables are thawed and mixture is thoroughly heated.
  • 2 In baking dish, layer 3 cups of the potatoes and 1 cup of the cheese. Spoon ground beef mixture over cheese. Top with remaining potatoes. Cover with foil.
  • 3 Bake 55 to 60 minutes or until bubbly. Remove foil. Sprinkle with remaining 1 cup cheese. Bake uncovered 5 minutes longer or until cheese is melted. Sprinkle with paprika before serving.

Very easy meal. A little on the bland side though. I like to stick to the recipe the first time I make something new. Next time, I will experiment with spice and cream of mushroom soup.

I have been making this casserole for years with some variations. For the liquid I usually blend a can of gravy and cream of mushroom soup or cream of celery. I also like to use a 60/40 blend of beef and pork instead of just beef. For the cheese I use whatever is in the fridge; cheddar, jack, mozzarella, provolone or I blend two or three of them. Seasoning can be tricky, read gravy and soup labels for sodium content. Also works great with mini tator tots instead of hash browns.

Potatoes need to be fried up a bit to get crispy- if not they just seem not done !! Could have used 2 cans of gravy-kind-of tasteless !!
