Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, finely chopped
  • 2 teaspoons chopped fresh or 3/4 teaspoon dried thyme leaves
  • 2 Gold Medal™ All-Purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 carton (32 oz) Progresso™ vegetable or chicken broth
  • 3 cups uncooked fusilli pasta
  • 2 cans (5 oz each) tuna in water, drained
  • 1 package (10 oz) frozen sugar snap peas
  • 2 cups shredded Monterey Jack cheese (8 oz)
  • 1/2 cup half-and-half
  • 1/2 cup crushed corn chips

Steps

    On 6-quart Instant Pot™, select SAUTE; adjust to high. Melt butter in insert. Stir onion, bell pepper, garlic and thyme into butter; cook, stirring occasionally until vegetables are tender. Stir in flour, salt and pepper until well mixed. Stir in broth and pasta.

    Secure lid; set pressure valve to SEALING. Select MANUAL/PRESSURE COOK; cook on high pressure 12 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.

    Once all pressure has been released (about 5 minutes), stir in tuna, sugar snap peas, cheese and half-and-half. Select SAUTÉ; adjust to normal. Cook, stirring frequently, 2 to 4 minutes or until thoroughly heated and peas are crisp-tender. Select CANCEL. Sprinkle with corn chips.

    Fusilli is a spiral pasta, which works well with cream sauces because the twists hold all the delicious, flavorful sauce. Penne and rotini pasta are good substitutions for the fusilli.
