cups vegetable oil

cups Gold Medal® all-purpose flour

teaspoon baking soda

medium apples, peeled and finely chopped (2 cups)

cup chopped nuts
Caramel Glaze
1/2
cup butter or margarine
1/2
cup packed brown sugar
2
teaspoons milk
  • 1 Heat oven to 350°F. Grease and flour 12-cup fluted tube cake pan. In large bowl, beat granulated sugar, oil, vanilla and eggs with electric mixer on medium speed until light and fluffy. Beat in flour, salt and baking soda until smooth. Stir in apples and nuts. Pour into pan.
  • 2 Bake 1 hour to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes. Remove from pan to cooling rack.
  • 3 In 2-quart saucepan, heat all glaze ingredients to boiling, stirring occasionally. Boil 2 minutes, stirring constantly; remove from heat. Spoon glaze over warm cake.

Made this cake for a breakfast at my Sister's work. Everyone LOVED it! I added Cranberries to mine. And I halved the recipe for the glaze, which was plenty. The only thing I didn't like was I couldn't taste the apples, next time I'll leave them in bigger chunks. I like the idea of adding the spices and applesauce.

I rated this 4 spoons because I did change it up a little bit. To help all those with flavor issues with the cake 2tsp apple pie spice will perk this cake right up. You can also sub in cinnamon and nutmeg if you don't have apple pie spice on hand. I also subbed in 1 1/2 cups of splenda for the sugar and then used equal amounts of brown sugar and white sugar for the remainder called for. Last substitution was I used 1 cup applesauce and only 1/2 cup oil. Cake turns out perfect moist flavorful and with the spice is great by itself with coffee.
