Golden Roasted Chicken Breasts

Ingredients

  • 1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
  • 1 tablespoon fresh lemon thyme leaves (from 4 to 6 sprigs)
  • Freshly ground pepper to taste
  • 4 bone-in chicken breasts

Steps

    Heat oven to 450°F. In small microwavable bowl, microwave butter until melted. Stir in thyme and pepper; cool.

    Place chicken, breast side up, in roasting pan. Brush melted butter mixture over chicken. Sprinkle any thyme remaining in bowl over chicken.

    Roast uncovered 45 to 55 minutes or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Cover loosely with foil; let stand 5 minutes before serving.

Tips from the Betty Crocker Kitchens

  • tip 1
    Be sure to melt the butter and mix it with the herbs first. This will allow time for the butter to soak up some of the lemon flavor from the thyme while you are getting the chicken ready.
  • tip 2
    The roasting time will vary depending on the size of the chicken breasts. If the chicken breasts are very large, use a roasting pan with a rack to allow the chicken to sit above the bottom of the pan. Since the roasting time will be longer, the butter and any drippings could begin to smoke, so add about a cup of water to the bottom of the pan before placing in the oven.
