Fluffy Key Lime Pie

Adding whipped topping to this Florida favorite makes for a lighter, fluffier pie filling. Yum!

cups finely crushed graham crackers (20 squares)
1/3
cup butter or margarine, melted

tablespoons sugar

can (14 oz) sweetened condensed milk

cup Key lime juice
1
container (8 oz) frozen whipped topping, thawed
  • 1 Heat oven to 350°F. In small bowl, mix graham cracker crumbs, butter and sugar. Press in bottom and up side of 9-inch glass pie plate. Bake 8 to 10 minutes or until golden brown; cool.
  • 2 In large bowl, beat milk and lime juice with electric mixer on medium speed until smooth and thickened. Fold in whipped topping. Spoon into cooled pie crust.
  • 3 Cover and refrigerate about 1 hour or until set. Store in refrigerator.

Expert Tips

If Key limes aren’t available in your grocery store, look for bottled Key lime juice near the other bottled lime juices.

If you like flaky pastry, use Betty Crocker® pie crust mix to bake a single pastry crust in a 9-inch pie plate. Cool the baked crust, and add the Key lime filling.

Could not believe how delicious this was! We fell in love with key limes when my parents lived in FL years ago, and this recipe was pretty simple (squeezing a pound of keylimes was a pain--finally figured out to cut them in half, put them in a sandwich bag and then squeeze them with our fingers). Not sure how to find keylime juice which would be a huge time saver.

Made it today for my family, we're from Miami so we're big fans of key lime pie. This is definitely a light recipe, we're used to a heavier pie but this was a great after dinner dessert that doesn't weigh you down. I would suggest using bottled key lime juice because I almost used the while pound bag of key limes just to get the 1/2 cup of juice. But it was very easy and very delicious!
