Crust

pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2
cup butter or margarine, softened
1
egg
Filling

cup packed brown sugar
2
tablespoons Gold Medal® all-purpose flour
1/2
teaspoon baking powder
1/2
teaspoon salt
1/2
teaspoon vanilla
2
eggs
1 1/2
cups chopped pecans
  • 1 Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • 2 In large bowl, stir all Crust ingredients until dough forms. Press dough in bottom of pan using floured fingers. Bake 20 minutes.
  • 3 Meanwhile, in medium bowl, stir all Pecan Filling ingredients until well blended. Pour over hot crust.
  • 4 Bake 15 minutes or until center is set. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

I think they tasted delicious but they really were difficult to remove from the pan even though I used parchment paper, and they took atleast 15 min longer to bake, they also didn't look anything like the picture ;But I think I'm gonna try making them once again hopefully I'll have better luck next time

I made these in a smaller square pan and baked them for 5 mins longer at the end. The bars were thick and chewy. I could see adding a teaspoon of instant coffee or cocoa to the filling.. They are really good, and easy to make. Be sure to cut them while still slightly warm, it is much easier to do then. If you can manage to save them until then, the pecan flavor is much more pronounced on the 2nd day...

DO NOT bake the "cookie" base for 20 minutes!!! Cookies don't take 20 minutes to bake; then the base has to cook even more after the 'filling' goes on. Thought it didn't sound right when originally reading the recipe, but did it anyway because I've always trusted Betty. Still giving 5 spoons, though, because they tasted so darn good, even with the dry tough cookie bottom. Will make them again but will do it my way next time. :)
