cups light corn syrup

cup creamy peanut butter

pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix

cups crisp rice cereal

cup salted peanuts
  • 1 Line 2 large cookie sheets with waxed paper or foil.
  • 2 In 5-quart heavy Dutch oven, heat corn syrup to boiling over medium heat, stirring occasionally. Stir in peanut butter until melted. Stir in cookie mix until well blended. Cook 2 minutes, stirring constantly. (Candy thermometer should read 160°F.)
  • 3 Immediately remove from heat. With wooden spoon or rubber spatula, gently fold in cereal and peanuts until well coated.
  • 4 Drop by rounded tablespoonfuls onto cookie sheets. Flatten each cookie slightly with fingertips. Cool completely, about 30 minutes. Store covered at room temperature.

My family absolutely loves anything peanut butter and I was looking for something yummy, yet different than what I usually make for them. This definitely fit the bill! I was in a bit of a rush and opted for the "bar" version, spreading the chocolate on top. They come out very "dense" in bar form so I strongly recommend cutting them in relatively small squares. A small serving is enough to satisfy.

this was a(n) desert for someone who loves peanut butter for sure. It was great, they got gone fast, but it was too much peanut butter for me. I will keep this quick recipe in mind for the rest of my family!!!

These are very good!Make sure you have everything measured and ready to go.I had these done in about 20 minutes.Also it does make quite a bit.I made mine probably twice the size they recommend and still ended up with a dozen more than I thought I would.They are quite sweet but I didnt think they were too bad.I used crunchy peanut butter because I had no nuts to add and it worked out great.
