flour or corn tortillas (6 to 8 inches in diameter), cut into 1/2-inch strips

cups shredded cooked chicken or turkey

cups salsa verde or green sauce

cups shredded Chihuahua or mozzarella cheese (8 ounces)
  • 1 Heat oil in 10-inch skillet until hot. Cook tortilla strips in oil 30 to 60 seconds or until light golden brown; drain.
  • 2 Heat oven to 350ºF. Grease 2-quart casserole.
  • 3 Layer half of the tortilla strips in casserole; top with chicken, half of the salsa verde (about 2/3 cup) and 1 cup of the cheese. Press layers gently down into casserole. Repeat with remaining tortilla strips, sauce and cheese.
  • 4 Bake about 30 minutes or until cheese is melted and golden brown.

For a quick, south-of-the-border fiesta, serve this flavor-packed casserole with salad greens tossed with cool ranch dressing and some piping-hot corn muffins.

This recipe is delicious! However, I made a few changes. First, I boiled the chicken then I shredded it with 2 forks and added spices to taste. I used tortilla chips instead of frying my own and it tasted wonderful. Then, I layered the ingredients just like the instructions said, but here is were I made a few changes. I added 1 can of black beans (it really adds a wonderful taste and consistency to the dish) then I added a layer of green chillies. Everyone who had it asked me for the recipe. I served with with Mexican red rice and a side salad. This was a last minute thing. We had 6 people coming over for dinner and I didn't have a lot of time. Prep time is no more than 15 minutes once the chicken is shredded. The rice cooked in the rice cooker while the Casserole was in the over. Super easy and super YUMMY!

I took this and went the easy route! Early in the day I stuck two frozen chicken breast in my crock pot with a 2 cans of rotel and cooked them on high for a couple hours. At that point they were perfect for shredding. I shredded the meat and scooped it all up in refrridgerated it till dinner. I used flour tortillas and instead of frying them I took them (3) and sliced them with my pizza wheel, and then baked them at 400 for about 10 mins (nice and crispy). I then layered one of the bottom, topped with the meat mixture, then some salsa (I chose reg, instead of the green - I have a child; green food is evil ;)), topped with a mexi-blend cheese, and then layered up again. The top was just a tortilla and then some cheese. Turned out excellent. Sure maybe what I did makes it an entirely different dish - but it was super delish and easy for me since my work was split up throughout the day. :) Enjoy!

Great recipe! The most time consuming part was shredding the chicken and cooking the tortilla strips but it was worth it and I love how this recipe only has a few ingredients. Will definitely make this one again.
