Chicken Breasts with Orange Glaze

Wake up the flavor chicken with an easy orange glaze made from orange marmalade, mustard, orange juice and soy sauce. It’s citrus delicious!

tablespoon butter or margarine

boneless skinless chicken breast halves (1 1/4 pounds)

teaspoon cornstarch
1/2
teaspoon ground mustard
1/2
cup orange juice
1/4
cup orange marmalade
2
tablespoons soy sauce

  • 1 Melt butter in 8-inch skillet or 3-quart saucepan over medium heat. Cook chicken in butter about 15 minutes, turning once, until juice of chicken is no longer pink when center of thickest piece is cut.
  • 2 While chicken is cooking, mix cornstarch and mustard in small bowl. Stir in remaining ingredients.
  • 3 Place chicken on serving plate; cover to keep warm. Discard any juices left in the skillet.
  • 4 To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

This is a great meal. Very quick and easy. I always use chicken thighs since they are juicier and cheaper. I also double the glaze and serve this with jasmine rice and green beans. Dinner is on the table in 30 min. Yum.

My husband and I like this very much. I increased the orange juice part to 3/4c. and used orange pineapple juice instead and increased the cornstarch to 2 tsp. this made the citrus flavor stronger and toned down the soy sauce. Will make this again.

We liked this. Very easy. I place my chicken into a slow cooker after browning them, with all the sauce ingredients. I served with a side salad, and steamed rice. We had one of my daughters friends over the night I served this and she really liked it.
