Ingredients

package (8 ounces) cream cheese, softened
1 1/2
cups shredded Swiss cheese (6 ounces)
1/2
cup Thousand Island dressing
4
ounces deli sliced corned beef, chopped
1/2
cup well-drained sauerkraut
Pretzel crackers, if desired
Cocktail rye bread slices, if desired
Chopped fresh chives, if desired
Sliced radishes, if desired

Directions

  • 1 Heat oven to 400°F.
  • 2 Mix cream cheese, 1 cup of the Swiss cheese, the dressing and corned beef. Spread in pie plate, 9x1 1/4 inches, or quiche dish, 9x1 1/2 inches. Top with sauerkraut and remaining 1/2 cup Swiss cheese. (Cover and refrigerate up to 24 hours if desired.)
  • 3 Bake about 15 minutes or until bubbly around edge. Serve hot with pretzel crackers or cocktail bread. Garnish with chives and radishes.

Create Cheesy Rachel Appetizer by using 4 ounces deli sliced turkey, chopped, instead of the corned beef.

Just wanted to pass on that on my last pick-up I made for the first time Potato Leek soup. Many of the irniednegts I used came from my share. I added sausage that really made it a meal. So thanks to you all because being a new member this season has gotten me to try new foods and different recipes. The soup came out great if I do say so myself and my wife loved it too!Steve H

Do you serve the reuben mixture on bread and crackers or do you just put bread and crackers next to the mixture and let guests spoon their own?

I made this for a party they had at work & it was the biggest hit. Everybody loved it & it was the first (of many dishes)to be completely gone. I did use a 14 oz can of saurkraut though. I am sure they will want me to bring this to every party from now on! lol!
