Cheesy Herb and Bacon Twice-Baked Potato Casserole

From our Betty Crocker Cookbook, 13th edition, this scrumptious twice-baked potatoes dish is a real winner! It's company-worthy, certainly, but it's just so good, you'll want to enjoy it more often than the holidays!

Ingredients

  • 6 medium round red or white potatoes or Yukon Gold potatoes or 4 medium russet potatoes (2 lb), peeled if desired, cut into 2-inch pieces
  • 1 package (5.2 oz) soft garlic-and-herbs cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 to 1/3 cup half-and-half, warmed
  • 1 1/2 cups shredded cheddar cheese (6 oz)
  • 2 tablespoons chopped fresh parsley
  • 6 slices bacon, crisply cooked, crumbled (1/2 cup)

    In 2 1/2-quart saucepan, place potatoes and enough water just to cover potatoes. Heat to boiling; reduce heat. Cover; simmer 15 to 20 minutes or until potatoes are tender when pierced with fork. Drain; return potatoes to pan. Shake pan with potatoes over low heat to dry potatoes (this will help mashed potatoes be fluffier).

    Meanwhile, heat oven to 350°F. Spray 1 1/2-quart casserole with cooking spray.

    Mash potatoes in pan with potato masher until no lumps remain. Stir in garlic-and-herbs cheese, salt and pepper. Add half-and-half in small amounts, stirring after each addition (amount of half-and half needed to make potatoes smooth and fluffy depends on type of potatoes used). Stir in 3/4 cup of the cheddar cheese and 1 tablespoon of the parsley. Spread in casserole. Sprinkle with remaining cheddar cheese and bacon.

    Bake uncovered 15 to 20 minutes or until potatoes are hot and cheese is melted on top. Sprinkle with remaining parsley.
