Cheesy Barbecue Casserole

Ingredients

cups uncooked ziti pasta (11 oz)
1
lb lean (at least 80%) ground beef
1
medium onion, chopped (1/2 cup)
1/4
cup chopped fresh parsley
1
cup milk
1
cup barbecue sauce
1
cup shredded mozzarella cheese (4 oz)
1 1/2
cups shredded Cheddar cheese (6 oz)

Directions

  • 1 Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • 2 Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • 3 Stir pasta, 3 tablespoons of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 cup of the Cheddar cheese into beef in skillet. Spoon mixture into casserole. Sprinkle with remaining 1/2 cup Cheddar cheese.
  • 4 Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 tablespoon parsley.

very yummy, very filling dish! when i mentioned the recipe to my husband he didn't think it sounded too great but to his surprise it was very tasty! the only thing i did differently was use whole grain pasta. give it a try, u wont be sorry

I made this for a friend, who just had a baby 2 weeks ago, and her 4 year old son. It was so easy to make, and they just loved it! We both agreed that it would be a perfect dish to take to a barbeque/cookout. This surely deserves 5 spoons up!!
