cups Original Bisquick® mix

cup coarsely chopped fresh spinach
1/2
cup shredded Swiss cheese (2 ounces)
1/4
cup grated Parmesan cheese

tablespoons chopped green onions
  • 1 Heat oven to 400ºF. Grease bottoms of 12 regular-size muffin cups.
  • 2 Beat milk, oil and egg in medium bowl until blended. Stir in remaining ingredients just until moistened. Fill muffin cups 2/3 full.
  • 3 Bake 15 minutes or until golden brown; cool slightly. Remove from pan. Serve warm.

I made these awesome muffins for lunch today along with salad and homemade chicken noodle soup. I didn't have swiss cheese so I added a cheddar/monterey jack combination which I had on hand. They were very moist. I will definitely make these again. Next time I will try them with the swiss cheese.
