lb bulk mild Italian pork sausage

large onion, chopped (1 cup)

medium carrot, finely chopped (1/2 cup)
1
medium stalk celery, finely chopped (1/2 cup)

cloves garlic, finely chopped

can (28 oz) Muir Glen® organic whole peeled tomatoes, undrained
1
can (15 oz) Muir Glen® organic tomato sauce
1/2
cup dry red wine
1/4
cup chopped fresh Italian flat-leaf parsley

teaspoons dried basil leaves, crushed
2
teaspoons dried oregano leaves, crushed
1/2
teaspoon coarse salt (kosher or sea salt)

teaspoon pepper
  • 1 In 4-quart saucepan, cook beef, sausage, onion, carrot, celery and garlic over medium heat, stirring frequently, until beef and sausage are thoroughly cooked; drain.
  • 2 Stir in tomatoes, breaking up with spoon. Stir in remaining ingredients. Heat to boiling. Reduce heat; simmer uncovered about 30 minutes or until slightly thickened.
  • 3 Serve over cooked pasta as desired.

I doubled this sauce and my family enjoyed. I also simmered longer to reduce so sauce wasnt to runny. We all enjoyed very much. Like all sauce this was better the next day. While simmering I thought more salt was needed. I am sure that was because of the kind of tomatoes I was using. I will be making this again. Next time I want to make sure I have a good cheese for a topping.

My husband liked it, but I thought it was so-so.... The, sausage flavor was a little strong for me since I don't care for italian sausage. I would also suggest using a different noodle... like a small pasta shell, those large rigatoni noodles are just difficult to cook to the right tenderness. Also, be sure and saute the celery and onion long enough so that it is nice and soft. I was getting slightly crunchy celery and it didn't blend well with the otherwise soft ingredients.
