Grandma's Chicken Casserole

As is a Southern tradition, my Grandma loves feeding her family. The recipes in her arsenal are hearty, comforting and always delicious. A family-favorite recipe is her Chicken Casserole. She keeps the ingredients for this easy casserole in her house at all times, just in case any unexpected guests stop over.  It is so quick to put together and leaves all her friends and family full and happy!

Here's what you will need... 

Chicken Casserole
First spread cooked chicken in a 9x13 pan. This recipe works great with leftover rotisserie chicken or turkey.

Spread two cans of cream of chicken soup on top of the chicken.

Cover the soup layer with a sprinkling of 2 cups shredded cheese.

Next melt the butter and mix with the bread crumbs. My grandma’s trick is to melt it right on top.

Mix bread crumbs and melted butter well and sprinkle over casserole. (Note: My grandma usually uses dry stuffing mix for the topping, but use bread crumbs for added crunch)
Bake in a 350 degree oven for 35-40 minutes.

This casserole is delicious for feeding your family and unexpected guests, or can be scaled down for two. It can be made ahead and refrigerated until ready to bake. Plus, it freezes very well. Enjoy and be full and happy…Grandma’s orders!
