A grain that's a staple for almost half of the world's cuisines. There are thousands of varieties of rice, which is grown either in flooded fields (aquatic rice) or on tropical or subtropical lands (hill-grown rice). Rice is classified by its length: long grain, medium grain or short grain. Varieties include regular long-grain white rice, short-grain Arborio rice and aromatic rices such as basmati.
