Ingredients

  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 3 large eggs
  • 1 package (8 oz) cream cheese, softened
  • 1 container (6 oz) French vanilla or vanilla yogurt
  • Golden yellow food color
  • 1/2 cup Cheerios™ cereal

Instructions

  • Step

    Heat oven to 350°F. (325°F for dark or nonstick pans). Grease the bottom only of 1 (6-inch) round cake pan with shortening or cooking spray and place paper baking cups in 16 regular-size muffin cups.

    In a large bowl, beat cake mix, bananas, oil, water, and eggs with an electric mixer on low speed for 30 seconds. Beat on medium speed for an additional 2 minutes, scraping bowl occasionally until smooth.

    Place 1 3/4 cups of the batter in the 6-inch round cake pan. Divide the remaining batter among the 16 lined muffin cups. Bake the round cake for 35 to 40 minutes and the cupcakes for 18 to 23 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from the pans to a cooling rack. Cool completely, about 30 minutes.

    In a small bowl, beat cream cheese and yogurt on medium speed with an electric mixer until creamy and smooth. Stir in enough food color to reach desired shade of yellow.

    Place the cake on a serving plate. Frost the top and side with the frosting.

    Place 2 rows of cereal around the bottom edge of the cake. Place 1 row of cereal around the top edge of the cake. On the top center of the cake, arrange cereal to form the number one.

    Use the remaining frosting to frost the cupcakes. Top with cereal to decorate, if desired. Store cake and cupcakes in the refrigerator.
