Each bite of Pineapple Fried Rice has mouthwatering tropical flavor!
On my first day of a trip to Hawaii, I fell in love with the food, especially anything with pineapple. The food is fresh, the flavor is tropical and many times they combine those with Asian cooking. Pineapple is America’s second favorite tropical fruit because of its juiciness and vibrant taste.

You will find pineapple in dishes at every meal in Hawaii. They use it in salsas and sauces, skewered with meat and, of course, in desserts. I bought several cookbooks that have inspired many new recipes since that trip. No matter what time of year, I can cook up a Hawaiian dish and be taken back to sunset dinners and beautiful beaches.
One of my popular repeat dishes is Pineapple Fried Rice. The rice would be great paired with teriyaki chicken or BBQ ribs. Top it with shrimp for a one-bowl meal. Pineapple makes it sweet and macadamia nuts give it a crunch, while ginger, garlic and cilantro add lots of flavor. This recipe is a perfect use for leftover rice. Plus, children love it!
