Winter Fruit Salad with Lemon-Poppy Seed Dressing

Ingredients

Dressing

cup sugar

teaspoons finely chopped onion

teaspoon salt

cup lemon juice

teaspoon Dijon mustard

cup vegetable oil

tablespoon poppy seed

Salad

large head romaine lettuce, torn into bite-size pieces (about 10 cups)

cup shredded Swiss cheese (4 oz)

cup cashews
1/4
cup sweetened dried cranberries
1
medium apple, cubed (1 cup)
1
medium pear, cubed (1 cup)

Directions

  • 1 In blender or food processor, place sugar, onion, salt, lemon juice and mustard; cover and process until blended.
  • 2 With machine running, add oil in slow steady stream, processing until thick and smooth. Add poppy seed; process a few seconds to mix.
  • 3 In large serving bowl, mix all salad ingredients. Pour dressing over salad; toss to coat.

I made this salad for our Christmas dinner and it was a hit. My husband even went back for seconds. I made the dressing a day ahead so that the flavors could blend. My family wants me to share the recipe. The dressing would be good for marinating as well.

I tried this salad at a brunch and loved it. It is pleasantly sweet, salty and satisfying. It is a perfect addition to brunch to compliment all of the egg/bread/sweet dishes. I plan to take it to a holiday brunch and will see if everyone there likes it as much as I do. I plan to use bottled dressing to save time.
