Joan K. Shares her Recipe "This is such an easy recipe to put together. I soak the beans overnight, drain them in the morning and finish the rest of the cooking just in time for lunch. Eating my main meal of the day at lunch worked better for me; I just felt more like eating then."
TO MAKE AHEAD: Divide chili among 3 airtight 2-quart freezer containers and label. Cool quickly and freeze no longer than 2 months. Remove lid from 1 freezer container; place upside down in 1-quart microwavable casserole. Microwave on High 5 minutes; remove container. Cover and microwave on High 20 to 25 minutes, breaking up and stirring every 5 minutes, until hot.
