tablespoon Chinese fermented black beans, rinsed, drained and coarsely chopped

tablespoons soy sauce

teaspoons sesame oil

small red chilies, seeded and chopped

pound fresh or frozen (thawed) uncooked large shrimp, peeled and deveined

medium green onions, sliced (2 tablespoons)
  • 1 Mix 2 teaspoons orange-pineapple juice and the cornstarch; set aside.
  • 2 Mix 1/4 cup orange-pineapple juice, the sugar, black beans, vinegar, soy sauce, sesame oil and chilies in 10-inch skillet or wok; heat to boiling. Add shrimp; stir-fry 3 to 5 minutes or until shrimp are pink and firm.
  • 3 Stir in cornstarch mixture. Cook and stir about 30 seconds or until thickened. Stir in onions.

Expert Tips

Chinese fermented black beans, also called salted black beans, are small black soybeans preserved in salt.

Toss leftover shrimp with cooked rice noodles for yet another Asian-inspired creation.

YUM! So easy and fast! I added some shredded carrot, just for a little bit of vegetables, and skipped the black beans. Served over rice, it's better than any Chinese food we can buy in our small town!

I made this last week because my sister saw the recipe online and gave it to me. It was delicious. I admit though, I didn''t use those beans because I don''t care for them, but I did use black beans and I also admit I added a few cloves of chopped garlic.

The sauce is quite heavy after adding the cornstarch mixture but divine! I squeezed a touch of lemon juice on just before serving and that was so good, I''ll add lemon zest also, next time! A definate choice!
