cups Bisquick® Gluten Free mix

teaspoons ground cinnamon
  • 1 Heat oven to 375°F. In large bowl, mix eggs, 1 cup of the sugar, the butter and shortening. Stir in Bisquick mix until dough forms.
  • 2 In small bowl, mix remaining 1/4 cup sugar and the cinnamon. Shape dough into 1 1/4-inch balls. (If dough feels too soft for shaping into balls, put dough in freezer for 10 to 15 minutes.) Roll balls in sugar-cinnamon mixture; place 2 inches apart on ungreased cookie sheets.
  • 3 Bake 10 to 12 minutes or until set. Immediately remove from cookie sheets to cooling racks.

I'm giving this recipe a 5++! My grandson is on a gluten-free diet & the whole family loves these cookies! The big trick is to set the dough in the freezer for about 15-20 minutes before rolling into balls. When you get your cookie sheets in the oven, place the dough back into the freezer until you're ready to form the next batch. Makes a BIG difference. I make the cinnamon & also a chocolate mixing a bit of Hershey's cocoa powder in the dough. When the chocolate ones come out of the oven, toss them in powdered sugar while still warm. Absolutely delicious!!
