1/2- to 4-pound fresh beef brisket (not corned beef), trimmed of fat

package (7 ounces) mixed dried fruit

carton (32 ounces) Progresso® beef flavored broth

teaspoon salt
1/2
teaspoon pepper

to 6 tablespoons Gold Medal® Wondra® quick-mixing flour
  • 1 Place all ingredients except flour in 3 1/2- to 4-quart slow cooker, cutting beef to fit if necessary.
  • 2 Cover and cook on Low heat setting 9 to 10 hours.
  • 3 Remove beef to warm platter; cover with aluminum foil. Increase heat setting to High. Beat flour into hot cooking liquid, using wire whisk. Cover and cook 5 to 10 minutes, stirring occasionally, until mixture is thickened. Cut beef into 8 portions; serve with sauce.

Vary the flavors of this dish by using different dried fruits. Using all apricots gives a sweeter flavor to the meat. Dried apples with a 2-inch stick of cinnamon will give a sweet, tangy fall flavor to the recipe.

Beef brisket is from the breast section under the first ribs. It is usually sold boneless. Brisket requires long, slow cooking to tenderize it and bring out the flavor.

Savory and delicious. I used Wyler's reduced sodium beef cubes diluted in water in microwave. I used Carne Asada & Bistec steak & meat seasoning rubbed into the beef brisket. I used my grandmother's Rivel Slow Cooker Crockpot (low heat). Added new potatoes and heirloom carrots from farmers market and onions to cook. Serve with Countryside Bar-B-Q-Sauce on the side (Chase's Original Family Recipe). We enjoy using dried apricots and honey-crisp (sweet/tart) apples.
