Slow Cooker Pork Roast and Sauerkraut Dinner

Sauerkraut, apples and caraway impart great German flavor to slow-cooked pork roast.

package (32 oz) refrigerated sauerkraut, drained

medium apples, peeled, sliced

teaspoon caraway seed
1/4
cup apple juice or water
1
boneless pork roast (2 1/2 to 3 lb), string removed, trimmed of fat

small red potatoes (about 18 oz), cut in half

tablespoon Dijon mustard
Mustard Sauce

tablespoons Dijon mustard

tablespoons packed brown sugar
  • 1 In 5- to 6-quart slow cooker, lightly mix sauerkraut, apples, caraway seed and apple juice. With spoon, make indention in center of mixture; place pork roast in center.
  • 2 Arrange potato halves around roast on sauerkraut mixture. Spread 1 tablespoon mustard over roast.
  • 3 Cover; cook on Low setting 7 to 8 hours.
  • 4 In small bowl, mix sauce ingredients. Remove roast from slow cooker; place on serving platter. Cut roast into slices. Arrange potatoes around slices. With slotted spoon, remove sauerkraut mixture from slow cooker; place in serving bowl. Serve roast slices and potatoes with sauerkraut mixture and mustard sauce.

    Dull and boring. Plebeian at best Let us fix this up so it could be served to a real German and not be embarrassed. First brown the pork on all sides. Remove the browned meat and add a roughly chopped onion, two large green apples sliced thickly, a couple of carrots cut in thirds. Sweat the onions then add the apples and carrots. This gives a quick start because everything is going into the crock pot warm. Make a bed of the sauerkraut. Pour over 1 can of apple juice and 1 of pineapple juice. place the vegies on-top the kraut and then add the roast on top. Make certain there is fresh pepper on the top...no salt...plenty in the washed kraut. A sprinkling of dried dill. Add the potatoes the last two hours at most otherwise you have potato mush. Cook for one hour on high and then on low 6 hours. I usually do it for 6 on high but then I am around to keep an eye on it. Make sure you have a grainy mustard to serve with this dinner along with fresh sourdough rye bread and unsalted butter. Serve with a Gewertstraumer wine or a light beer or other choice. A light lemon finish is nice such as a light lemon cake. Enjoy

    I had high hopes for this, but I was disappointed. The pork was very dry. I cooked it for 7 hours and set the crock pot to warm for the final hour. The pork shredded when I cut it. The apples were overpowered by the sauerkraut. Let me add that I forgot to make the sauce, but I don't think it would have made a tremendous difference. The pork was very bland (I did season it with salt and pepper before putting the mustard on top). I'll try a different pork recipe next time.

    This is a 5 min. put together dinner in the slow cooker. I did not have a large slow cooker so I used my small one and downsize the amounts used. When I started to put the meal together I thought I had everything in the house but I didn't have an apple or carraway seeds but I went ahead and started everything and went to the store later, 4 hr., and then added them, My husband and I really enjoyed this meal. It was a new adventure into German flavor. I also made cheesey biscuits to go with the meal.
