Slow Cooker Mushroom Swiss Steak and Gravy

Ingredients

large onion, chopped (1 cup)

medium carrots, sliced (1 cup)
1
can (4 oz) Green Giant® mushroom pieces and stems, drained
1 1/2
lb boneless beef round steak, cut into serving-size pieces
1/4
teaspoon pepper
1
can (18 oz) Progresso® Vegetable Classics creamy mushroom soup
1
can (8 oz) tomato sauce

  • 1 In 3- to 4-quart slow cooker, layer onion, carrots, mushrooms and beef. Sprinkle pepper over beef. In medium bowl, mix soup and tomato sauce; pour over beef.
  • 2 Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Place beef on serving platter. With slotted spoon, remove vegetables from cooker and spoon over beef. Stir gravy in cooker with wire whisk to blend. Serve gravy with beef.

There is plenty of yummy gravy to serve over mashed potatoes or hot noodles. Coleslaw completes the meal.

To save time, measure out 1 cup of purchased frozen chopped onion the night before, and place in the refrigerator to thaw.

I thought this was a decent and solid dish, but it NEEDS the noodles or potatoes, not as something that is optional. I used a pepper steak cut and the meat just fell apart - it was that good. When we ate leftovers, I made some egg noodles, but definitely will be trying over potatoes if I make it again.
