Expert Tips

Add a teaspoon of grated lemon peel for a Greek touch.

Leaving the pieces of carrots big enough for a fork keeps them fresh tasting, not mushy. Be sure to offer a fork when serving this hearty soup.

Top each serving with a spoonful of pesto for an added boost of flavor.

this soup was so good. I made this for my parents when they came to visit me and my family for the weekend. Everybody loved it. It was the fastest dinner to make and everyone loved the baby carrots left whole and chopped the celery and onion into large pieces. I also left out the snow peas and added more broth. I served it with rolls and mini saltine crackers. This was very fulling but it was all eaten up. I will defiantly make this again.
