large sweet onion (Bermuda, Maui or Spanish), sliced

well-trimmed corned beef brisket (3 to 3 1/2 lb)

teaspoon crushed red pepper flakes

cup Progresso® reduced-sodium chicken broth

tablespoon Worcestershire sauce

cup sour cream

tablespoon cream-style prepared horseradish

tablespoons chopped fresh parsley
  • 1 In 5- to 6-quart slow cooker, place onion. Thoroughly rinse beef; discard seasoning packet. Place beef on onion; sprinkle with red pepper flakes. In small bowl, mix broth and Worcestershire sauce; pour over beef.
  • 2 Cover and cook on Low heat setting 8 to 9 hours or until beef is tender.
  • 3 Remove beef and onion from cooker, using slotted spoon. Cut beef across grain into thin slices. In small bowl, stir sour cream, horseradish and parsley until blended. Serve with beef and onion.

Expert Tips

Corned beef was originally "corned," or preserved with granular salt, because there was no refrigeration. Today, the beef is cured in brine, and spices are added for a distinctive tangy flavor.

Serve the corned beef brisket with boiled small red potatoes and steamed green cabbage.

this was fantastic! The meat was very tender and I loved the juice with onions. I used the seasoning pack on the cabbage and potatoes..wonderful. My 4 and 5 year old loved this meal (had 2nds!) and so did my husband and I- this recipe is a keeper for sure.

This was the best corned beef recipe that I have tried. It is a keeper. My husband loved the sauce with it. I also did as the other person and used the spice packet in with my cabbage and baby reds. Was great!!! Only two of us, but we had little leftovers. That was the only bad part!!! No sandwiches!!

I made the corned beef the day before. I found it easier to slice the meat when it is cold. I placed the sliced beef on top of the veggies-- I cooked potatoes, carrots and cabbage wedges in the juice from the cooked corned beef- to reheat. Delicious!
