This is a perfect recipe and so simple. I had all the ingredients in my kitchen! The popovers were light and cooked perfectly. A little jam on each one turns them into a treat.

The previous cook should know that popovers ARE Yorkshire pudding. I do cheat on the "light" part and add a tiny dab of butter to each muffin cup after spraying with veg. oil spray. I always make these the morning guests are leaving. Sends everyone off on a happy note.
