jar (7 or 7.25 oz) roasted red bell peppers, well drained, coarsely chopped

tablespoon chopped fresh basil leaves

small clove garlic
1/2
cup 1/3-less-fat cream cheese (from 8-oz container)

tablespoon sliced almonds, if desired
  • 1 In food processor, place roasted peppers, basil and garlic. Cover; process until finely chopped. Add cream cheese; cover and process until smooth. Spoon dip into serving bowl. Cover; refrigerate 1 hour to blend flavors.
  • 2 Just before serving, sprinkle almonds over dip.

Expert Tips

Add bite to this dip by sprinkling it with crushed red pepper flakes.

Celery and carrots make great dippers. To make scooping the dip easier, cut celery into short wide slices and carrots into thick diagonal slices.

Serving a crowd? This dip recipe can easily be doubled.

This dip had good flavor, however, I found it to be a little soupy. It worked good as a spread for the mini turkey focaccia sandwiches, but I can't see using it as a dip for veggies, etc. Next time I will try it with real cream cheese instead of the 1/3 less fat cream cheese.

AWESOME! They serve a dip like this at The Rusty Skupper Restaurant at the Inner Harbor in Baltimore Md, with ciabatta bread. I don't add the almonds and I'd try it before adding the basil. I like the true red pepper taste and even though I love basil, it changes the flavor of this dip. I serve it with ciabatta bread cut up or Utz Wheel Pretzels for just a snack for the family. This is a great dip that gets eaten up within minutes. It's so different and if you like red or green peppers, you'll LOVE this!
