Ingredients

  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1/2 cup water
  • 2 tablespoons butter or margarine
  • 4 hoagie buns, split
  • Lettuce leaves, if desired
  • 4 slices (1 oz each) mozzarella cheese
  • 1 cup tomato pasta sauce or marinara sauce, heated

Steps

  • 1
Flatten each chicken breast to about 1/4-inch thickness between sheets of waxed paper or plastic wrap.
  • 2
In medium bowl, mix Bisquick mix, Parmesan cheese and Italian seasoning. Dip chicken into water, then coat with Bisquick mixture.
  • 3
In 12-inch nonstick skillet, melt butter over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until no longer pink in center. Fill buns with chicken, lettuce, mozzarella cheese and pasta sauce.

Tips from the Betty Crocker Kitchens

  • tip 1
Skip the buns and serve the chicken over freshly cooked spaghetti.
  • tip 2
Dip chicken into red wine vinegar instead of the water for a zesty Italian taste. If you don't have Italian seasoning, you can use instead 1/2 teaspoon each of dried basil, marjoram, oregano and thyme leaves.
