Penne with Tomato and Smoked Cheese

Here's a smokin' speedy casserole with just four ingredients! Use the do-ahead tip to make it even faster.

cups uncooked penne pasta (9 oz)
1
can (14.5 oz) Muir Glen® organic diced tomatoes, undrained

cups Alfredo pasta sauce

cup shredded smoked mozzarella cheese (4 oz)
  • 1 Heat oven to 350ºF. Spray 1 1/2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • 2 Meanwhile, in 2-quart saucepan, heat tomatoes to boiling. Reduce heat to medium; cook uncovered 6 to 8 minutes, stirring occasionally, until liquid has evaporated.
  • 3 In 2-quart saucepan, heat Alfredo sauce over medium-low heat until warm. Stir in cheese until melted. Mix sauce, pasta and tomatoes. Pour into casserole.
  • 4 Bake uncovered about 30 minutes or until hot in center.

Expert Tips

Sprinkle crumbled cooked bacon over the top of the baked casserole for an even smokier flavor.

When you need a meal that's quick and easy, assemble this dish the night before and refrigerate overnight. Bake as directed.

We love this dish with more tomatos, some Jennie-O-Turkey Hot Italian Sausage (sliced'n'broiled a few minutes) and also mushrooms!

This was great! I couldn't find the smoked cheese, so I used regular. I used fire roasted tomatoes. I am definitely making this again and I'm going to look for the smoked cheese, and use the tip for bacon.
