alright so i was looking for a good ice cream cookie sandwich recipe and this one came up. it was one of the first ones and it looked fabulous. and it actually was. everything was so easy. and since i needed these for that night and i also needed to prepare other things, it was a perfect treat. everyone loved it. the only tricky part was rolling the cookies and ice cream because the ice cream had started to melt. i also used chocolate chip cookies instead and they were amazing. just putting it out there.
