pints mint chocolate chip ice cream, slightly softened

package (6 ounces) ready-to-use chocolate-flavored pie crust

cups crushed chocolate-covered mint cookies

cup chocolate fudge topping
  • 1 Spread 1 pint of the ice cream in pie crust. Sprinkle 1 cup of the crushed cookies over ice cream. Cover and freeze 1 hour.
  • 2 Spread remaining pint of ice cream over cookies. Cover and freeze about 3 hours or until firm.
  • 3 Let stand at room temperature about 10 minutes before cutting. Serve with fudge topping; sprinkle with remaining cookies. Cover and freeze any remaining pie.

Amazing! Mint CC ice cream is my favorite. My brother in law isn't a fan of the ice cream, but tried this and couldn't stop eating it. Would definitely make it again. Quick, easy, and marvelous!

I made this a few years ago for the first time on St. Patricks day and my family - especially my kids - loved it. Now every year as St. Patty's Day approached they ask if we will be having it. Like another reviewer I make my own chocolate wafer crust, and I use "lite" ice cream.

I made this recipe a few months back and my kids/family loved it. I did do a few alterations to the original recipe. I made my own chocolate wafer crust. I then mixed the broken cookies and the ice cream together and added some creme de menthe to the mixture (maybe 4-6 tbsp). If you add the alcohol you need to add more time for the ice cream to set back up. I would recommen making it early in the morning or the night before you are wanting this dessert.
