Lobster Bisque

tablespoons butter or margarine

small onion, finely chopped (1/4 cup)

tablespoons Gold Medal® all-purpose flour

tablespoon chopped fresh parsley

teaspoon pepper

cups milk

cup Progresso® chicken broth (from 32-oz carton)

1 1/4

cups chopped fresh or frozen (thawed) lobster (about 12 oz)

• 1 Melt butter in 3-quart saucepan over low heat. Cook onion in butter, stirring occasionally, until tender. Stir in flour, parsley, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat.
• 2 Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in lobster. Heat to boiling; reduce heat. Simmer about 3 minutes, stirring frequently, until lobster is white.
