cup Bisquick Heart Smart® mix

egg white or 2 tablespoons fat-free egg product
1/2
cup cut-up cooked chicken breast
1/4
cup barbecue sauce
1/4
cup shredded reduced-fat Cheddar cheese (1 oz)
  • 1 Heat oven to 400°F. Spray 8x4-inch loaf pan with cooking spray. In small bowl, stir together Bisquick® mix, water and egg white; spread in bottom of pan.
  • 2 In small microwavable bowl, mix chicken and barbecue sauce. Microwave on High 1 minute; stir. Spoon over batter in pan to within 1/2 inch of edges; sprinkle with cheese.
  • 3 Bake 20 to 23 minutes or until golden brown; loosen from side of pan.

Expert Tips

A leafy green salad tossed with a fat-free vinaigrette makes a veggie-rich side.

You can use canned chicken breast for the 1/2 cup cooked chicken.

Jazz up the flavor with spicy barbecue sauce or your favorite hot barbecue sauce.

This is a great, easy recipe. I added drained and rinsed black beans, corn, sliced olives and diced red onions - made a great difference. I used chicken I had cooked in the slow cooker with just barbeque sauce. Will make again!
