cup uncooked jumbo elbow macaroni (3 oz)
1/3
cup Green Giant® Valley Fresh Steamers™ frozen sweet peas
2/3
cup fat-free (skim) milk

oz reduced-fat cream cheese (Neufchâtel), cut into small pieces, softened

slices (3/4 oz each) process American cheese

tablespoons crushed fat-free herb-seasoned croutons
  • 1 Cook and drain macaroni as directed on package, omitting salt and adding peas for the last 5 minutes of cooking.
  • 2 Meanwhile, in 10-inch nonstick skillet, heat milk, cream cheese and American cheese over medium-low heat, stirring carefully with wire whisk, until cheese is melted.
  • 3 Add cooked macaroni and peas to cheese sauce; stir to coat. Let stand 2 to 3 minutes or until slightly thickened. Serve topped with croutons.

Expert Tips

Using a wire whisk will help make it easier to stir the cream cheese into the milk.

I noticed several people complained about this not starting with a roux.It is for a light version so of course a base of flour and butter would not belong here.You can tell by the ingredients what it will taste like and guess the texture.I must be in the minority.If I dont like ingredients or preparation method I simply close the window and no comment is necessary.

This recipe as written is too liquid; add 1 Tbls Gold Medal Wondra flour while melting the neufchatel to make a rue and then the other ingredients and it is much better. We skip the croutons. We have a large family of eight (including boys/teens) so we multiply the recipe by four & I add 1/2 cup shredded sharp cheddar and a drained 12 oz can of water packed tuna or salmon for a complete meal. Other substitutions include cooked white chicken and broccoli instead of the peas. They all LOVE it and it still only takes 10 minutes! Another add-in
