cup butter or margarine, softened

container (1 lb) Betty Crocker® Rich & Creamy vanilla frosting

teaspoon Betty Crocker® green gel food color

large marshmallows

small (1-inch) chewy chocolate candies

small green gumdrops
  • 1 Heat oven to 375°F. In medium bowl, stir cookie mix, butter and egg until soft dough forms. Roll dough in 24 (1-inch) balls. On ungreased cookie sheets, place 2 inches apart.
  • 2 Bake 10 to 12 minutes or until edges are light golden brown. Immediately place marshmallow on each cookie. Remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  • 3 In microwavable bowl, microwave frosting on High 30 seconds. Stir; frosting should be a thick spoonable glaze. Stir food color into frosting, adding more if needed to achieve desired color. Spoon warm frosting over each cookie, coating completely and allowing excess to drip off. Let stand 20 minutes to set.
  • 4 Roll chocolate candies into ropes. Flatten with rolling pin into 1/8-inch-thick ribbons. Cut into strips with scissors to resemble hat bands; arrange around base of marshmallow on each cookie. Cut gumdrops crosswise in half (reshaping as needed). Press cut side onto hat band. Lift cookies onto serving platter with pancake turner, leaving excess frosting behind. Store in airtight container.

I just made these for a St. Patrick's Day celebration at work and my co-workers LOVED them! They raved about them all morning. Don't pass these up because the recipe looks too complicated - it really wasn't that difficult. At first it was taking me a while to make the Tootsie Roll hatbands, but once I figured out my own system for doing it the work went by much faster. Next time I make these it likely won't take me nearly as long (in total, for my first time making these, I spent about three hours on them). Tips: - Add a little over 1/2 tsp. of mint extract to the frosting. - Microwave the Tootsie Rolls two at a time for only a few seconds, making them soft and bendable. I struggled trying to use a knife to cut the strips; when I used kitchen scissors I found it was MUCH easier and faster. - Microwave the frosting in small portions. I used store bought frosting and was afraid it wouldn't spread well since some reviewers here had had issues with it, but I found that if I microwaved only a couple of spoonfuls at once and then immediately poured it over the hats, it spread nicely (only a small amount of touch-ups were necessary). Also, this doesn't have to be as messy as it sounds. I set the cooled hats on aluminum foil and then went to town with the frosting. Really DRENCH the hats in it, then after the frosting has dried you can use a knife to cut around the edges, leaving the mess behind on the foil. Even "wasting" so much frosting like this, I still had enough to cover all of the cookies.

This is the second time I have made these. The first time it took me forever!!! This time it only took me two hours. If you microwave the tootsie rolls one at a time for no more than 2 seconds they roll out much easier.

Working on these for my youngest sons class tomorrow...reading some of the reviews and wanted to mention that the recipe does say to put the marshmallow on when the cookies come out of the oven, helps them stick...and then the frosting goes over the marshmallow and cookie since they are now attached. Only problem I have had is the frosting setting too quickly...put the hats I wasn't happy with in the microwave for about 7 sec and they came out great! I'm going to "glue" on a coated chocolate candy with frosting instead of the gumdrop...couldn't find a bag with lots of green and didn't want to have all those other colors sitting around begging me to eat them!
