Recipe Ingredients

Let's get baking! Here are the delicious ingredients in this Lemon Poppy-Seed Cake recipe.

Lemon Cake Mix: Your shortcut to an easy lemon cake! It provides the foundational ingredients for a moist cake with a delightful lemon flavor right from the start.

Water: Water is essential for hydrating the cake mix ingredients, activating the leavening agents, and creating the perfect batter consistency.

Vegetable Oil: Oil contributes significantly to the cake's moisture and tenderness. It helps create a fine, soft crumb and keeps the cake from drying out.

Eggs: They act as a binder, holding the cake together, and providing structure. They also add richness, moisture and help with leavening.

Poppy Seed: They add a subtle, nutty flavor and a beautiful visual speckled appearance, making your poppy seed cake truly special.

Lemon Frosting: This is the genius shortcut for your easy lemon glaze! When microwaved, it transforms into a pourable, tangy, and sweet topping that adds an extra burst of lemon flavor and a beautiful sheen to your finished cake. It's the perfect complement to the cake's richness.

How to Make Lemon-Poppy Seed Cake

Here are the simple steps to create this delicious Lemon-Poppy Seed Cake, along with some helpful tips and tricks to ensure success. See the full recipe below for all the details.

1. Prepare

Fluted pans can be tricky! For best results, put a dab of shortening on the outside of a small plastic sandwich bag. Slip the bag on your hand and use it to rub shortening into every nook and cranny of the pan. Repeat with more shortening until it's completely coated.

2. Mix Your Batter

Before pouring, stir in the 2 tablespoons of poppy seeds directly into the batter. This ensures they're evenly distributed throughout your cake.

3. Bake

To check if it's done, insert a toothpick into the center of the cake. If it comes out clean, your cake is ready!

4. Cool

If your cake doesn't easily release from the pan, don't force it! Tip it back over and let it sit for a few more minutes. You can also use a long, thin spatula to gently loosen the sides and around the center tube before trying to flip it again. Give it several hard raps on the bottom to help it release.

5. Glaze

Once the cake is completely cool, spread the microwaved frosting over the top, allowing some of that delicious glaze to drip down the sides for a beautiful presentation.

How to Store Lemon-Poppy Seed Cake

Store your cake loosely covered at room temperature using a large cake dome, a spacious container with a lid, or even plastic wrap tented over the cake. It will stay fresh and delicious for up to 3 days.
