Ingredients

box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix
1 1/4
cups ranch dressing
3
cups torn romaine lettuce
2
cups shredded carrots
2
cups fresh broccoli florets
2
plum (Roma) tomatoes, coarsely chopped

Directions

  • 1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • 2 Drain pasta; rinse with cold water. Shake to drain well. In medium bowl, stir together seasoning mix and dressing. Add pasta; toss to combine.
  • 3 In 3- or 4-quart glass salad bowl or 13x9-inch glass baking dish, layer lettuce, carrots, broccoli and pasta mixture. Top with tomatoes. Serve immediately, or refrigerate.

Wonderful salad. Would add celery and bacon and cheese. Maybe also cauliflower. I love crunchy food and the pasta salad is great.

I made this a few weeks ago for a potluck and it went over great and it was so simple to make. For my taste next time I will add a bit more ranch dressing but this really is a great salad. I am making it this weekend for a bbq.

I have made this salad several times now... It's awesome and leaves very little left overs it is so popular. One thing I recommend is if you buy the carrots bagged pre-shredded at the store, to cut them a little smaller. I am now getting requests for it when invited to parties. Thanks Betty!
