I made this pie yesterday & I just loved it!! I'm not sure why all the reviewers said it was "eggy" or tasted like scrambled eggs, but mine tasted like coconut custard. Also, it was soooo easy. Next time, I might try putting all the ingredients in a blender, but I just followed the recipe as is & it was delicious. This is a definite keeper for me.

I have been making this pie since I was a teenager. I'm a huge fan of coconut and this is so easy and quick...it really seems impossible. Now everyone loves this...husband and children think I'm a hero for the few minutes it takes. There is nothing that compares to this wonderfully, custardy, coconutty, impossibly easy pie!

i have heard about the impossible pies for years but thought they were mostly hamburger concoctions until i read the recipe on the coconut package...i did mine in the blender and sprinkled the coconut on top and it was so good...golden brown coconut on top and creamy custard on the bottom...yum...and equally delicious hot, warm or cold..lol

Okay, this pie was delicious! I am SO glad I read the reviews regarding the number of eggs. I followed the recipe, but used 1 egg instead of 4...OMG it is sooooo good! It definitely is IMPOSSIBLY easy!

Very quick, easy and tasty. I changed it up by adding 2/3 c of Nestles Quik and reducing the sugar to 1/2 c for a twist on a Chocolate Coconut Pie. Can also top with raspberries/strawberries for color. Great for quick dessert for company or for a potluck.

This was the very first impossible pie I made, 30 years ago. I still make it, it is still my favorite. Quick easy dessert for drop in company. Always have the ingredients in the pantry.
