Hot Pretzel Bites

Sarah Caron from Sarah's Cucina Bella shares a favorite appetizer recipe - super easy homemade pretzels. This warm, crusty, buttery, salty bite-size pretzel is perfect for snacking between plays. Serve them up with dipping sauces like honey mustard and salsa con queso.

Ingredients

package dry active yeast
1 1/2
cup warm water
1
tablespoon granulated sugar
4
cups all purpose flour
1/2
teaspoon salt
1
large egg
Coarse salt
1
tablespoon unsalted butter

  • 1 Preheat oven to 425°F degrees. Line a baking sheet with parchment paper.
  • 2 In a large bowl, combine the yeast and warm water. Let sit until the yeast dissolves (about 2-3 minutes).
  • 3 Stir the sugar into the yeast mixture until dissolved.
  • 4 Add the flour and salt. Stir to combine. The dough will be crumbly. Turn the dough out onto a floured board and knead with floured hands until smooth.
  • 5 In a small bowl, lightly beat the egg. Set aside.
  • 6 Divide the dough into 5 portions. Working with one at a time, roll the dough balls out into ropes that are about 1 inch in diameter. Use a sharp knife to cut 1-inch lengths of dough.
  • 7 Drop each of the dough pieces into the egg mixture and immediately transfer to the prepared baking sheet. Place them about 1/2 inch apart. Sprinkle with coarse salt.
  • 8 Slide the tray into the oven and bake for 8-10 minutes, until golden brown. Repeat the process until all the dough has been cooked.
  • 9 Melt the butter and brush all the pretzel bites with butter, then sprinkle with more salt.

To make these taste more for like pretzels, poach them in a baking soda bath before brushing them (not dunking them in!) with egg. 2 quarts boiling water to 1/4 cup baking soda. Don't pour the baking soda in all at once! Boil bites for 30 seconds a side, brush with egg and sprinkle with salt, then bake.

These were very easy to make, but they did not taste like pretzels. They tasted like bread dipped in egg and baked - very bland, even with butter and salt.

These were pretty good. They taste a lot like the kind you buy in the frozen food section of the grocery store. however, they took me way longer to cook than the 8-10 minutes suggested in recipe. Also, not sure I would dip them in egg. Going to try it without the egg next time and see what I get.
