Classic Caesar Dressing
1/4
cup olive or vegetable oil
1/4
cup fat-free cholesterol-free egg product
1
tablespoon lemon juice
1
teaspoon Dijon mustard
1
teaspoon anchovy paste
1
large clove garlic, finely chopped
Salad
1
lb boneless beef top sirloin steak, 1 inch thick
1
tablespoon freshly ground pepper
1
head romaine lettuce, torn into bite-size pieces
1
cup garlic-flavored croutons
1/2
cup shredded Parmesan cheese (2 oz)
  • 1 Heat coals or gas grill for direct heat. In tightly covered container, shake all dressing ingredients until well blended. Refrigerate until serving time.

  • 3 In large bowl, toss romaine, croutons, cheese and dressing. Top with beef slices. Serve with additional shredded Parmesan cheese if desired.

Expert Tips

Casear Cardini, chef and owner of a restaurant in Tijuana, Mexico, is credited with creating this beloved salad and dressing in 1924. Many variations of this timeless treat find their way into today's recipes.

Look for packaged romaine hearts in your produce section for less dirt and waste than your average head of romaine.
