Classic Caesar Dressing
1/4cup olive or vegetable oil
1/4cup fat-free cholesterol-free egg product
1tablespoon lemon juice
1teaspoon Dijon mustard
1teaspoon anchovy paste
1large clove garlic, finely chopped
Salad
1lb boneless beef top sirloin steak, 1 inch thick
1tablespoon freshly ground pepper
1head romaine lettuce, torn into bite-size pieces
1cup garlic-flavored croutons
1/2cup shredded Parmesan cheese (2 oz)

1.Heat coals or gas grill for direct heat. In tightly covered container, shake all dressing ingredients until well blended. Refrigerate until serving time.
2.Sprinkle beef with pepper. Cover and grill beef over medium heat 15 to 18 minutes for medium doneness (160°F), turning once. Cut beef across grain into thin slices.
3.In large bowl, toss romaine, croutons, cheese and dressing. Top with beef slices. Serve with additional shredded Parmesan cheese if desired.
